Tofu Scramble - A Favorite Vegan Breakfast

Breakfast has long been my favorite fare of the day and this recipe for 'Tofu Scramble' has quickly become one of my go-to morning meal choices.

I have tried it with different combinations of vegetables, but tend to favor this blend of mushrooms, peppers, onions and spinach.

I have also found that this breakfast scramble reheats beautifully, which comes in handy for those days I need to be out the door in a hurry.

On this day I paired my scramble with some multi-grain toast, but there are countless other tasty ways to serve this. 

- Add some black beans and wrap in a whole wheat tortilla with salsa for a breakfast burrito.

- Serve with multi-grain nacho chips.

- Serve alongside some sweet potato home fries.

- Avocado is wonderful alongside this scramble....but then again avocado is wonderful with anything.

Now, onto the recipe:

Tofu Scramble

Serves 2-3

- 1 small Yellow Onion, chopped
- 1/2 Red Bell Pepper, chopped
- 1/2 cup chopped Mushrooms
- 2 tsp minced Garlic
- 1/4 cup fresh Basil, chopped
- 2 tbsp Nutritional Yeast
- 1/4 tsp Turmeric
- 1/2 tsp Black Pepper
- 1/2 tsp Black Salt aka Kala Namak
- 1/2 cup unsweetened Almond Milk
- 1-14oz package Extra Firm Tofu, drained and pressed
- 3 cups Baby Spinach

Place onions, peppers, mushrooms and garlic into a heated non-stick skillet. Saute until onions start to brown. Add a tablespoon of water and stir to mix in the caramelization from the onions. Add the basil, nutritional yeast, turmeric, black salt, pepper and almond milk. Crumble the tofu into the mix and cook on medium heat for 5 minutes, stirring occasionally. Stir in the spinach and cook until spinach starts to wilt.

Spring Touches in the Family Room

Bright, sun filled skies and warmer temperatures tell me that Spring has offically arrived here in New Hampshire and with it comes the time to refresh the house.

I try to bring a bit of the outdoors in for each passing season. For us, the first sign of Spring is the return of our fine feathered friends.

Hearing their sweet sounds is music to my ears, after a long winter.

Plants are starting to sprout outside, so I added bits of greenery here and there throughout the house.

I have never been into shiny, glitzy things, but tarnished, worn silver - that's a whole other story.

The shelves are filled with a few simple objects to reflect the season.

Books, whether new or old are a recurring theme with my decor. They are the perfect anchor for just about anything.

I collect 'K's' with the thought of including them in a gallery wall someday. Today, this striped letter found its place amid my Spring decor.

Finding ways to display handmade objects gives them more meaning and personalizes your home.

With that in mind, my Bird Pincushion settled into place easily with its tarnished silver and winged chickadee.

With so many birds flying about, this nest was inevitable.

Since the mantel and the shelving got an update, the coffee table needed a lift as well.

As per my usual style, I kept it very simple. A distressed dark wood tray corrals a couple of books topped with a magnifying glass. 

It may seem a bit odd, but I am always checking out the plant area at the grocery store. There are new items every week that find their way into my carriage. On my last trip, I found this sweet plant filled mason jar terrarium.

Come to think of it, I find decor items in all sorts of unusual places - the hardware store, the grain store and my favorite place - my own home - moving things around from room to room as the seasons change or the mood strikes me.
